i look forward to spring every winter for many reasons, not least of which is knowing that ataulfo mangoes will be in their prime. besides eating them straight and gnawing on the pit, here are a few of my favorite ways to enjoy this seemingly magical fruit:
breakfast: everyday, sitting outside in the sun, with some greek yogurt and a sprig of chocolate mint. drizzle of honey, optional.
salad style: this was first made for us by our friend, kemper, while he was visiting. besides being an amazing painter and entertainment personified, kemper is an alum of French Laundry. it's a variation on salad caprese: layer slices of mango, fresh mozzarella, and fresh basil leaves. soooooo goooooood.
ice cream: my new, favorite ice cream is mango coconut. i substituted coconut milk for half the cream in the recipe i used. the coconut milk is subtle but really deepens and enhances the mango flavor. it just tastes special. and good for breakfast too!
let me know the many ways you like to eat mangoes. i want to try them all.

just love them! blended into homemade bubble tea, fruit shakes, a quick saute in butter for yummy crepes, grilled with honey, lime and black pepper, sauteed with caramelized onions and chili powder......
ReplyDeleteDiced and mixed into quinoa with a light vinaigrette, chopped shallots, cilantro (or not) and toasted pepitas. These mangoes put other mangoes to shame.

ReplyDeletesauteed in butter and tucked into a crepe? that sounds like magic! maybe that's what i'll bring to tomorrow's potluck. i just made (a larger) batch of the ice cream, but i agree lisa, it's hard to get to cooking with them when they are so lusciously perfect to begin with. sharon, i think you put it best - i will be using that quote on ataulfo newbies!

ReplyDeleteUntil I started eating these Mangoes, I never felt like I "got" mango. Those large green and red varieties always seemed stringy and difficult to manage. Ataulfo (also known as Manila Mangoes or Champagne Mangoes) Mangoes are scrump-didly-umptious.
Will make note of the butter and crepe treatment for future use.
